Fig, Blueberry & Goat Cheese Fro-Yo Popsicles

If you’re looking for a savory and sweet frozen treat, look no further. I once had a salad with these ingredients and what was a delicious salad is even better in fro-yo form. This recipe uses storebought fig jam, but if you know how to make your own, go right ahead (and then send me some).

Fig, Blueberry and Goat Cheese Fro-Yo Bars

Prep time: 5 minutes

Yield: 2 popsicles

For this recipe, I’m using my wonderful, wonderful Tovolo popsicle molds that detach from their base so you can make only a few at once. This means you can wash and remake as you go and always have some fresh pops in the freezer. If you’re in the market for popsicle molds, I highly recommend them.



-       8 oz plain, full fat yogurt (I recommend Pequea Valley Farm)

-       2 T fig jam

-       1 oz goat cheese

-       1/3 cup fresh blueberries

-       1 T Great Lakes gelatin (optional – this will alter the consistency and texture of the pops but not the taste, so if you’re trying to work extra gelatin into your diet, this is a great way to do it)

-       Combine ingredients and spoon into popsicle molds, making sure to tap them against the counter from time to time to release air bubbles.

-       Freeze.

-       Wait impatiently.

-       Consume
